Little Clover Wine Pop-Up

Little Clover Wine Pop-Up

Saturday, November 9 • Knapp Winery

Our friends from Little Clover Wine Company will be set up for tastings, wines by the bottle, and some FLX fun! Known for their three traditional-method sparkling wines, Riesling, Cayuga White, and Delaware, this is the perfect time to stop in and stock up before holiday season.

About Little Clover Wine and owner Erin McMurrough:

"As an ardent lover of sparkling wine, I became infatuated with the smaller, grower-style sparkling wines coming out of France. Rather than blending juice from various vineyards, these wines represent a particular place and time, highlighting the work of the grower. And it clicked–we can do this here. We can produce a high-quality sparkling wine that is representative of our estate on Seneca Lake in the Finger Lakes.

It was important for me to use sustainably grown grapes from our vineyard. And it was also important for me to use non-traditional (or at least less traditional) varietals. I selected Riesling, Cayuga White, and Delaware to showcase vinifera, hybrid, and native grapes. They all bring something different to the table, and these varieties will appeal to adventurous and open-minded sparkling wine lovers.

Producing traditional method sparkling wine is extremely time-consuming–each bottle is touched numerous times, probably too many to count. And every time the process moves forward, I become more excited about what’s inside. This is an exploration. This is a labor of love. This is what wine is all about. I can’t wait to share it with you."

2024 Ice Wine Release

2024 Ice Wine Release

2024 Ice Wine

ice wine harvest

A Very Special Release

Winemaker Vanessa Hoffman is excited to present Knapp’s very first ice wine. A true ice wine, the grapes were picked on a cold, dark 8 degree winter morning and pressed at temperatures under 17 degrees. The selection of Vidal Blanc grapes was very selective, resulting in a small yield of this beautiful wine. Making ice wine is a laborious process that can only be achieved in cold climates like ours.

>> The difference between ice wine and iced wine

A sweet dessert wine, ice wine is produced when the sugars in the grapes do not freeze, but the water does, allowing for a more concentrated grape juice to develop. It can be enjoyed all year round, however we think it is best enjoyed chilled and paired with dessert on a warm summer night.

Join us June 1 for tastings and bottle purchases at the winery. Available online as well.
