A Very Special Release
Winemaker Vanessa Hoffman is excited to present Knapp’s very first ice wine. A true ice wine, the grapes were picked on a cold, dark 8 degree winter morning and pressed at temperatures under 17 degrees. The selection of Vidal Blanc grapes was very selective, resulting in a small yield of this beautiful wine. Making ice wine is a laborious process that can only be achieved in cold climates like ours.

A sweet dessert wine, ice wine is produced when the sugars in the grapes do not freeze, but the water does, allowing for a more concentrated grape juice to develop. It can be enjoyed all year round, however we think it is best enjoyed chilled and paired with dessert on a warm summer night.
