The Secret To A Sweet Summer: 3 Wine Cocktail Recipes

We all love a cold, sparkling beverage in the heat and are familiar with the flood of brightly colored drinks being sipped on outdoor patios at local restaurants that comes along with the season’s change. It’s a true sign of an Upstate NY summer!

Knapp's wines are not only delicious on their own but also provide a perfect base for a variety of cocktails. Here are some of our favorite wine cocktail recipes for warmer days—all using Knapp wine. Quench your thirst while enjoying the unique flavors of the Finger Lakes region.

Knapp Brut Spritz

Savor the effervescent and refreshing flavors of Knapp’s Brut Sparkling wine in a spritz! Our Brut is a blend of Chardonnay and Cayuga White, with just a hint of sweetness from the dosage. It’s a lively but delicate mousse (bubbles) with flavors of green apple, brioche, and candied lemon peel. It’s such a festive wine; it makes any day feel like a celebration.

Ingredients:
3 oz Knapp Brut Sparkling
2 oz soda water
1 oz Aperol (or your favorite bitter liqueur)
Orange slice for garnish
Ice

Directions:
Fill a wine glass with ice. Pour in Knapp’s Brut Sparkling wine, soda water, and Aperol. Stir gently to combine and garnish with an orange slice.

Knapp White Peach Sangria

Enjoy a sangria made with Knapp’s Cayuga White—perfect for sharing with friends and family. White peach on the nose, our Cayuga White wine features Pink Lady apple on the palate with bright acidity finishes and a creaminess and hint of sweet mandarin. It’s pleasant, refreshing, and perfect for a day on the boat or on the table with spicy Thai food.

Ingredients:
1 bottle Knapp Cayuga White
1 cup peach schnapps
1 cup club soda
2 peaches, sliced
1 lemon, sliced
1/4 cup fresh mint leaves
Ice

Directions:
In a large pitcher, combine the Knapp Cayuga White and peach schnapps. Add the sliced peaches, lemon, and mint leaves. Refrigerate for at least 2 hours to allow the flavors to meld. Just before serving, add the club soda and ice. Stir gently and serve in glasses garnished with extra peach slices and mint leaves.

Knapp Rosé Berry Bliss

Bask in the vibrant and fruity flavors of Knapp’s Dry Rosé wine in this summer-perfect cocktail. Our 2023 Dry Rosé is a beautiful pale pink color with delicate aromatics. A creamy mouthfeel is balanced with zippy acidity, plus raspberry and hints of hibiscus. This rosé is meant for celebrations and all the times in between.

Ingredients:
1 bottle Knapp Dry Rosé
1/2 cup raspberry liqueur
1 cup mixed berries
1/2 cup soda water
Fresh basil leaves for garnish
Ice

Directions:
Fill a large pitcher with ice. Pour in Knapp’s Dry Rosé and the raspberry liqueur. Add the mixed berries and stir to combine. Top with soda water. Serve in glasses with a few fresh basil leaves for garnish.
